David Ravandi, founder of organic, biodynamic 123 Tequila which comes in three styles, 123 Organic Blanco (Uno), 123 Organic Reposado (Dos) and 123 Organic Añejo (Tres) says the tequilas begin their journey to the customer’s glass the juice of roasted Blue Agaves. The tequilas are USDA and EU certified organic, part of the distillery’s emphasis on renewable resources. No pesticides or synthetic fertilizers are used.
The Reposada and Añejo tequilas spend six and 18 months respectively in oak barrels which impart woody notes to the final products. The Blanco is smooth and silky while he Reposado offers agave on the nose and a minty, anise finish. The Añejo has more wood characteristics with hints of tannin and wood oil on the nose. As it opens, hints of chocolate and caramel appear.
Here in the Northeast, it is distributed by Blueprint Spirits in Everett, MA. 123 Organic produces 10,000 cases annually. Prices at retail range from $40 to $55 a bottle.
