BOSTON – BESPOKE, a new addition to COCHON555, takes place tomorrow from 8:30 a.m. to 2:30 p.m. at SoWA Power Station in the South End. Come listen, share ideas and more. Making its national debut, the symposium aims to enrich the culinary and intellectual worlds of all present beginning with keynote speeches by leading thinkers such as Dr. Amy Trubek (Vermont Professor and author of Taste Of Place: A Cultural Journey into Terroir) and Adam Sharp (formerly Twitter’s Head of News, Politics, and Elections). A four person panel will address issues of power, labor, diversity, and class in the restaurant industry, followed by a series of intimate talking circles pairing no more than 15 guests with each of the day’s guest speakers for lively, themed discussions. This marks the beginning of a partnership between Cochon555 and the American Friends of the world’s most prestigious forum for food studies, the Oxford Symposium on Food & Cookery. Cochon555 returns to Boston with a new event

BOSTON – Cochon555, a celebration of heritage breed pigs, returns to Boston April 7-9 with events not to be missed! The newest will be BESPOKE, “A Cold-Brewed Exploration of Taste and Thought,” with all proceeds going to charity. It’s a daytime symposium April 8 from 9:30 a.m. to 2:30 p.m. with keynote speeches by leading thinkers, a panel on issues of power, labor, diversity and class in the restaurant industry and “talking circles” with the day’s guest speakers. BESPOKE is a partnership between Cochon555 and American Friends of the Oxford Symposium on Food & Cookery. On Sunday, Cochon555’s Heritage Fire takes place with five chefs competing. Each chef is given a 180 to 200-pound heritage breed pig and must create six dishes for a crowd of pork-loving enthusiasts. Chefs then present a “Judge’s Plate” scored on utilization; global influences; cooking techniques; and overall flavor. The winning team will be crowned the “BBQ King or Queen” of Boston. In addition to sampling 1,500 pounds of competitor’s dishes, all tickets includes “BBQ Traditions” – the fringe festival of flavor – where notable chefs prepare one dish from their favorite grilling culture in the spirit of collective feasting. The company recently won approval to cut ties with By Chloe founder and co-owner, Chloe Coscarelli, according to published reports.

Honeygrow salad/stir fry concept plans Hub outlet

BOSTON – Honeygrow, a salad/stir fry concept based in Philadelphia, is said to be eyeing a summer opening here in the Fenway, according to Boston Business Journal. The unit, in the Viridian apartment complex near Fenway Park, will be the 18th site for the chain, which allegedly plans more in Brooklyn, New York and Philadelphia.


Five top chefs to take part in Cochon555 Global Edition in Boston April 9th

BOSTON -If the combination of BBQ and top chefs creating it turns you on, April 9th is a date to put on the calendar!

It’s Cochon555 Global Edition featuring Heritage BBQ, a competition with five top chef teams, five barkeeps, five somms and more, and it takes place here at SoWa Power Station in the city’s South End, the host venue for a weekend of Cochon555-sponsored events.

Leading the chef teams will be Josh Lewin, Juliet, Daniel Bojorquez, La Brasa, Marc Sheehan, Loyal Nine, Matt Jennngs, Townsman and Meghann Ward and Kevin Walsh, Tapestry.

They will be cooking 1,500 lbs. of heritage pig, and there will be a pop-up Ramen Bar, Tomahawk Ribeye Bar, La Brea Bakery Pop-Up, Farmstead Cheese Bar, Creminelli Cured Meats, Luxe Butter Bar, Perfect Puree Dessert Station and an Ice Cream Social.
